Earth Bread

This recipe takes just 2 hours to make a from scratch bread!

Items Needed:

  • 2 (1/2 ounce) packages active yeast
  • 6 tablespoons honey
  • 4 cups warm water (105 to 115 degrees F)
  • 1 1/2 cups quick-cooking oats, warmed in oven
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 5-6 cups all-purpose flour
  • 2 cups whole wheat flour
  • 1/4 cup oat bran
  • 1/4 cup wheat germ

Heat oven to 275 degrees F. In large bowl dissolve yeast and 2 tablespoons honey in warm water. Let stand 20 minutes. Stir in rolled oats, remaining honey, oil and salt. Let stand 5 minutes. Stir in 4 cups flour, 2 cups whole wheat flour, oat bran and wheat germ. Stir in enough remaining all-purpose flour to make dough easy to handle. Turn dough onto lightly floured surface; knead until smooth and elastic (about 10 minutes).

    Cover; let rest 10 minutes

Divide dough into thirds. Shape each third into loaf. Place loaves in 3 greased 9x5 inch loaf pans. Bake for 15 minutes. Increase oven temperature to 350 degrees F. Continue baking for 30-40 minutes or until loaves sound hollow when tapped. Remove from pans. If desired, brush tops of loaves with butter.

Yields 3 loaves (16 slices for each loaf).
